Strawberry jam tart

If you are looking for a recipe which will delight you during a reading session, the strawberry jam tart suits the need. I like to make it in single portions and enjoy them while reading on the sofa.

Ingredients for 4 single portions:

  • 200 g rice flour

  • 2 eggs

  • 80 g butter

  • 60 g sugar

  • lemon zest

  • strawberry jam

Method:

Mix all the ingredient in a bowl, except for the jam, until forming a dough. Now, dust the kitchen worktop with rice flour and using a rolling pin roll out the dough until it is a 4 mm thick. Place it gently on a single serving size cake pan making it adhering and eliminate the pastry excess. Repeat the process for all the other cake pans. Then, place them in a preheated oven at 180° for five minutes. In the meantime, use the dough excesses to make tarts decorations. Using a cookie cutter with a heart shape, cut as much pastry as possible in many tiny sweet delicious hearts. After five minutes, take the tarts from the oven and spread the strawberry jam over them. Decorate using the pastry hearts arranging them in a singular manner to cover the jam. Cook the tarts again in the oven at 180° for 15 minutes, or until the pastry surface becomes golden-brown. Let tarts cool before removing them from the pan.
